Sisters Mary Nguyen and Kristin Liu operate the Kitchen in the former home of their parents’ Chinese Gourmet Restaurant in Florissant, and the selection of Chinese, Vietnamese and Thai fare honors the recipes of their late mother, Tram Nguyen.
My favorite item here, the General Tso’s chicken, is among the best examples of the familiar dish in St. Louis. The sauce charges the chicken with definite heat and a playful tanginess I can’t quite pin down. Citrus? Vinegar? Both? Or something else besides? It never tips into gloppy sweetness, and the chicken stays crisp from first piece to last.
